Chef himself visits and
selects vegetables with rich flavors.The vegetables used at La Saison are purchased from "Nagata Farm" and "Kubota Farm". The more you chew the vegetables, the more you can taste their natural sweetness and flavor. We are also making efforts to reduce the amount of waste by using the roots and peels of vegetables, which are usually considered inedible parts, as accents to enjoy their texture or as a kind of powder for sauces, assuming that they are used up as much as possible.

Main beef and deer are also carefully selected from Fukuoka
For the main meat dish of the course, we use meat produced in Kyushu and as much as possible in Fukuoka Prefecture. The beef is Hakata Wagyu, which is raised on high-quality fodder made mainly from rice straw produced in Fukuoka Prefecture and is known for its tender, juicy, and delicious taste. In addition, the restaurant uses venison and other game species imported from a game processing plant in Ukiha City. We prepare them with all our hearts so that the lives captured as vermin can be enjoyed in a delicious way.

Fukuoka City is close to the sea and has an abundance of seafood. Seafood arrives directly from the market every day, and we do not specify the ingredients when purchasing. We do not specify the species and refrain from using endangered species. As a restaurant, we hope to support sustainable fishing as much as possible in Japan's proud fishing industry.
